Nestled in the heart of the Flint Hills in Council Grove, Kansas, we are a true historical dining destination.


We create and dish up straight-forward Kansas cooking with an elevated spin. From our guest-favorite Country Fried Steak to our much-raved-about desserts, we keep our guests coming back for more. How else would we roll? We've been in business since 1857 and our terrific food and high standards of service are the reasons why.


Hays House 1857 was founded by Seth Hays (Fun Fact: He was Daniel Boone's great-grandson) as a restaurant and trading post on the Santa Fe Trail. Our restaurant has changed hands several times in its 165-year history, but our commitment to quality food and serviceremains the same. Purchased in 2019  by rancher Frankie Greco and Chef Randy Dickson, we are the oldest restaurant west of the Mississippi.
